I've been following Empire Grade Purveyors on Instagram and been obsessed with their galettes. So when I stumbled on this recipe, I was like "yup, must try." Although I did run into couple of issues (couldn't find dill anywhere) and I used herbed goat cheese instead of regular, the results were pretty freaking good. The crust was flaky (thank you, butter) and nutty while potatoes and leeks provided that savory flavor. A perfect meal for those summer nights.
